**MDH Chana Masala Recipe for Chickpeas**
**Ingredients:**
– 200g chickpeas
– 50g cooking oil
– 120g red onions, chopped
– 120g tomatoes, chopped (approximately 2 tomatoes)
– 20g Chana Masala spice blend
– 1 teaspoon salt
– 800ml fresh water
– ? teaspoon baking soda
**Spice Blend Components:**
– Coriander seeds
– Red chilies
– Turmeric
– Cumin
– Iodized salt
– Black pepper
– Fenugreek leaves
– Mustard seeds
– Dried ginger
– Cassia
– Cardamom (Amomum)
– Cloves
– Nutmeg
– Mace
– Asafoetida
**Instructions:**
1. Soak the chickpeas in ample water overnight. After soaking, drain the water.
2. In a large pan, heat the cooking oil over medium heat. Saut? the chopped red onions until they turn golden brown.
3. Incorporate the chopped tomatoes and stir well.
4. Add the Chana Masala spice blend, salt, and the soaked chickpeas. Mix thoroughly and cook for 5 minutes.
5. Pour in 800ml of fresh water and add ? teaspoon of baking soda. Bring the mixture to a boil, then cover the pan.
6. Reduce the heat and let it simmer for 40 minutes. Alternatively, you can pressure cook the mixture for 20 minutes with 400ml of water and ? teaspoon of baking soda.
7. For best results, also refer to the cooking instructions on the chickpeas packet.
