MDH PAV BHAJI MASALA SPICE BLEND FOR VEGETABLES
Recipe: Exclusive to Bombay Pav Bhaji.
1. Begin by boiling 200g of potatoes. Once cooked, peel and dice them.
2. Simultaneously, boil 150g of assorted vegetables such as carrots, cauliflower, and peas.
3. In a deep pan, saut? 100g of finely chopped red onions in 60g of butter until they turn golden brown.
4. Next, add 100g of coarsely chopped tomatoes, a pinch of salt, and 15g of Pav Bhaji masala to the pan.
5. Incorporate the boiled vegetables along with ? cup of water, and on high heat, mix and mash everything together for about 10 minutes.
6. Finally, spread butter on slices of bread or slit baps, toast them, and serve alongside the bhaji.
Ingredients: Coriander seeds, red chilies, dried mango, cumin, iodized salt, fennel seeds, cassia, dried ginger, black pepper, cardamom (Amomum), cloves, star anise, nutmeg, and mace.
