It is customary for everyone in the region to begin their day with a cup of Sheer Chai. Although its preparation requires more time compared to other teas due to its unique method, the effort is well worth it.
Noon Chai, also referred to as Kashmiri tea, is a traditional drink from Kashmir. The term “Noon” translates to salt in the local dialect. This tea is crafted from special tea leaves, milk, salt, pistachios, and almonds, with cinnamon occasionally added for an extra layer of flavor. A small amount of baking soda is incorporated to enhance the tea’s distinctive pink hue. In Kashmir, this tea is typically enjoyed twice daily, in the morning and evening.
Kashmiri Noon Chai is renowned for its pink color, yet it does not possess a sweet flavor profile. Instead, it offers a unique sweet-salty taste that sets it apart from other tea varieties found in India.
**Instructions:**
1. In a pan, combine 2 cups of water, green tea leaves, crushed cardamom, and baking soda.
2. Add the tea leaves to the water and allow them to steep thoroughly.
3. Let the mixture simmer on medium heat until the water reduces by half, which should take approximately 18-20 minutes.
4. Once done, turn off the heat and introduce 2 cups of cold water. This step is crucial for maintaining the vibrant pink color.
5. Vigorously stir the mixture with a ladle for about 1 minute.
6. Reheat the mixture and allow it to boil again for 10 minutes on medium heat.
7. Add sugar and salt, or just salt, or just sugar, depending on your preference. Traditionally, only salt is used.
8. Allow it to boil once more for about 10 minutes. The longer you boil the tea, the richer, creamier, and stronger the flavor will become.
9. Finally, strain the tea into cups and garnish with sliced almonds or crushed dried fruits.
